Early in the season, normally May to
October, our lamb is sourced from the Welsh Saltmarshes, a naturally
smaller animal. The salt water grazing land, gives a light and
subtle flavour to the meat. Orkney lamb takes over at its finest in
October, slightly heavier but nevertheless a lean and tender meat with
excellent flavour.
